The Keen family have been making Cheddar since 1899, using their own herd of Friesian cows and a traditional ‘pint pot’ starter culture. The curds are cut, drained, cheddared and milled by hand before the cheese is pressed and matured on the family farm for at least 18 months, with this Extra Mature version spending an additional six months in the family’s maturing rooms. Moist and firm with a satisfying, slightly crumbly texture, it has a powerful, tangy character with rich, full-bodied flavour, complex savoury depth and distinctive oniony notes.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eKeen’s Extra Mature Cheddar is delicious served with crusty bread, chutney, quince paste and seasonal fruit, or alongside pickles and cured meats on a cheeseboard. Its powerful, savoury character also makes it excellent for cooking, adding depth to Welsh rarebit, cheese sauces, gratins, baked potatoes and savoury tarts.
