Stinking Bishop is a distinctive British soft cheese made from full-fat pasteurised cows’ milk by artisan cheesemakers Charles Martell & Son at Hunts Court Farm in Gloucestershire. Launched in 1994, it is carefully matured with its natural rind washed in perry made from locally grown pears, encouraging the development of its characteristic pinky-brown rind, powerful aroma and wonderfully mellow flavour. Beneath the fragrant rind, the cheese has a soft, creamy texture that becomes increasingly rich and yielding as it matures. Despite its famously pungent aroma, Stinking Bishop has a surprisingly gentle, buttery character, with a delicate savoury depth and subtle fruity notes from the perry.

Stinking Bishop is delicious served with crusty bread, pear or apple, chutney and seasonal fruit, or as the star of a cheeseboard alongside Stilton and other robust British cheeses. Its soft, creamy character also makes it excellent for cooking, melting beautifully into sauces, risottos, gratins and savoury tarts. Pair with a crisp white wine, perry, sparkling wine or traditional farmhouse ale to complement its rich, mellow flavour and balance its distinctive aroma.

Store & Serve: Keep refrigerated below 8°C. Stinking Bishop has a shelf life of approximately 6 weeks from despatch. Remove from the refrigerator 30–60 minutes before serving to allow the cheese to reach room temperature and its full creamy texture and flavour to develop. The natural rind may develop mould spots in varying colours as the cheese matures; this is a natural characteristic of the cheese.
