Westcombe Cheddar is a distinctive traditional British farmhouse cheese made from cows’ milk at Westcombe Dairy in Somerset, where Cheddar has been made since the 1890s. Hand-made using milk from the Calver family’s own herd, traditional pint starters and animal rennet, it is cloth-bound and matured for at least a year. The Hand-Selected version is chosen from the finest cheeses of each month’s production and released only when it reaches its peak, typically between 14 and 18 months. Firm yet supple with a beautifully complex, grassy character, it has rich savoury depth, gentle sweetness and a lingering, earthy finish. Naturally occurring blue veins may develop as the cheese matures, adding further complexity and character.

Westcombe Cheddar is delicious served with crusty bread, chutney, quince paste and seasonal fruit, or alongside pickles and cured meats on a cheeseboard. Its rich, savoury character also makes it excellent for cooking, adding depth to Welsh rarebit, cheese sauces, gratins, baked potatoes and savoury tarts. Pair with a full-bodied red wine, robust farmhouse ale, stout or dry cider to complement its complex, grassy and deeply savoury flavour.

Store & Serve: Keep refrigerated below 8°C. Freshly cut and wrapped to order. Best eaten within 14 days of receipt. Remove from the refrigerator 30–60 minutes before serving to allow the cheese to reach room temperature and its full flavour and texture to develop.
